I'm not sure what kind of resources you are looking for specifically, but value chains are really just a part of a market systems approach (see [this MiC video](https://www.youtube.com/watch?v=NBi9yQ97-TA&feature=youtu.be) if you aren't sure what I mean by that).
Depending on what you are looking for, you will find a wealth of guidance, evidence, and resources.
Another great source to look at is https://www.marketlinks.org/ which I find most useful if there is a specific angle I am trying to work on (gender, youth, a specific country).

The third edition of the International Labour Organization's (ILO's) "Value Chain Development for Decent Work: A Systems Approach to Creating More and Better Jobs" provides an overview of how to take a systems approach to value chain development with the goal of creating more and better jobs.
